Malic acid is a naturally occurring acid found in apples and many other fruits, and it's what gives them (and a lot of sour lollies and drink mixes) their characteristic tart edge. As a food-grade ingredient, it's commonly used as an acidity regulator and flavour enhancer, often alongside citric acid in homemade drink mixes, gummies and flavoured supplements.

Beyond flavouring, malic acid (usually as a mineral salt, such as magnesium malate) turns up in some endurance and recovery products, since malate is part of the body's normal energy production pathway. That's a different use case to the food-grade acid used purely for taste, so it's worth checking which form a product is using if that's your interest.

For most home and small-batch use, malic acid is simply a way to add a clean, tart flavour without using actual fruit juice or altering a recipe's liquid content.
