BAKING INSTRUCTIONS:
STEP 1: Melt butter 35g - 50g until soft. (Adjust the amount of butter for your desired richness.)
STEP 2: Put butter into cake mixer, add an egg and 40g brown sugar or 80g Erythritol, or any sugar replacement you prefer.
(Sweetener amount is flexible! Experiment with honey, maple syrup, or any natural sweetener you like.) Mix on low speed until combined.
STEP 3: Add 4 rounded tablespoons (67g) of dry ingredients to the mix and continue to mix.
If the butter is too thick, add up to 1/3 cup liquid of your choice.
STEP 4: Scrape down sides of bowl and mix on medium speed until combined.
STEP 5: Pour mixture into a baking tin lined with baking paper and smooth out the surface.
STEP 6: Bake at 160C (320F) for 12 minutes or until soft when pressed or a skewer comes out clean.
STEP 7: Cool and cut into pieces.
