Stevia Reb-A (Stevia Extract) is an all-natural sweetener extracted from the stevia leaf, used to heighten sweetening intensity and improve taste. The stevia rebaudiana plant contains a high percentage of steviol glycosides (stevioside) and rebaudiana A, C, D & F. The filtration and purification process affects the quality, concentration and taste of the extract.

Stevioside has a liquorice aftertaste, while Rebaudioside A has no aftertaste and is considered the best-tasting form. Rebaudioside A can be filtered and purified up to 99%, which is why it is more expensive - the more purified and concentrated it is, the less bitter and the sweeter it tastes.

When you see Stevia 90% or 95% Stevioside on a label, it does not mean it is free of bitterness or aftertaste. Stevioside retains an aftertaste even at 99% purity, whereas Rebaudioside A does not, and has a sweetness comparable to sugar.

Because Rebaudioside A is so concentrated, only a very small amount is needed to sweeten drinks, shakes or baking, and a little goes a long way. Store your Stevia Extract in a cool, dry place, tightly sealed, to protect it from moisture and keep it free flowing.

Please note that Stevia Extract Reb-A 99.8% can be up to 250-300 times sweeter than sugar and is therefore considered to be a high intensity sweetener. As a dietary supplement and sweetener, use as desired. The typical amount recommended is 20mg, or about 1/32 tsp. Use a milligram scale for measuring.

The Organic Stevia 100% Natural Sweetener is a blend of stevia leaf extract Reb-A 99.8% and erythritol. Blending both evenly disperses the intense sweetness of the stevia extract and helps remove the aftertaste it can have. The Stevia Extract Reb-A 99.8% is the pure extract on its own.

Is Stevia Extract Reb-A 99.8% suitable for cooking/baking? 

Absolutely. It is good for treats including pastries, cakes, biscuits, muffins and pancakes, or for flavouring desserts like ice-cream and custard. Note that it does not caramelise as sugar does. 

Can Stevia Extract Reb-A 99.8% replace sugar? 

Absolutely. Note that it is 250-300 times sweeter than regular sugar, so the quantity will need to be adjusted to get the desired sweetness. It suits those looking to reduce their sugar intake as part of a balanced diet.
