Date Sugar: A Whole-Food Sweetener for Baking

Date sugar is exactly what it sounds like: whole dried dates, ground into a fine powder. Unlike refined sugar or even syrups, it's not extracted or processed to remove anything, so it keeps the fibre, and small amounts of the vitamins and minerals naturally found in dates.

The trade-off is texture and behaviour in recipes. Date sugar doesn't dissolve the way granulated sugar or liquid sweeteners do, so it works best in baking (cakes, muffins, granola) rather than in drinks or anything that needs a fully dissolved, clear sweetness. It also brings a mild caramel, toffee-like flavour that plain white sugar doesn't have.

It's still a source of natural sugars and calories, so it's not a free pass compared to other sweeteners - the main appeal is that it's minimally processed and brings some fibre along with the sweetness, rather than being calorie-free like monk fruit or allulose.
